Barbecue Pork Loin Chops

Pork loin chops (browned)
2 cans tomato soup
2 T brown sugar
2 T vinegar
Worcestershire sauce (2 tsp - optional)
Pour sauce over top of chops.  Can cook in crockpot a few hours on low, or bake for an hour at about 325.   I like them in the crockpot because they just fall apart and don't seem tough like pork chops sometimes do.

White Chili

Medium onion chopped and sauted in 1 T. oil
1 can diced green chilies
1 can chicken broth
2 cans cream chicken soup
2 cans chicken
2 cans Great Northern beans
1/2 tsp garlic salt
1/2 tsp onion salt
1 tsp chili powder
1/4 tsp cayenne pepper

Saute onion and then add everything else.  Stir and bring to a boil, reduce heat and let simmer about 20 minutes.  Can sprinkle with cheese and dip tortilla chips if you wish.  Yields about 10 servings.

Shredded Beef Burritoes

I just cooked the roast in a slow cooker overnight.  Then shredded it in the morning.  You only need to use part of your roast (I actually like to make these with the leftover roast from Sunday dinner).  Then I pour 1/2 can enchilada sauce and 1/2 can tomato soup over the shredded beef.  Mix together.  You may need to add a little water if it seems too thick.  Fill each burrito with meat and cheese.  Roll up.  Place burritoes in a baking dish.  Mix the rest of your enchilada sauce and tomato soup with half can of water.  You may need to use more sauce and soup to cover the burritoes.  Pour over the top and bake at 350 for about half an hour.  Spinkle with more grated cheese if you wish when they come out of the oven.  Serve with lettuce, sour cream and tomatoes or salsa if you wish.

Corn on the cob or fresh beans from the garden boiled and sprinkled with garlic salt would be yummy with the burritoes.

Italian Chicken

Sprinkle chicken tenders with garlic salt and broil in oven.  I do about 6 minutes each side and then test them to see if they are cooked clear through.  Slice the chicken and put in crockpot.  Cover with marinara sauce.  I just throw in a bottle of tomatoes, a can of tomato sauce and a package of Western Family spaghetti seasoning.  Serve over your favorite pasta. 

We like bread sticks and a green salad with our pasta dishes.

Walking Tacos

Seasoned taco meat
Single serving size bags of doritos or fritos
cheese
tomatoes
lettuce
sour cream
salsa
ranch dressing

This is like a taco salad in a bag.  My kids love this and it is so easy for summer.  Just reheat the meat and then let everyone make their own right in the bag.  It is easier to eat it out of the bag if you cut the bag open on the side rather than the top.  We crunch the chips a bit before adding everything else.  All you need is a fork. 

I like to serve this with watermelon or a fruit salad.  Great for picnics and camping!

Creamy Pork Chops, Darby - April Meal

Boneless pork chops
2 cans Cream of chicken soup
1/2 can water

Brown chops and place in crock pot.  Pour sauce over top and cook on low about 7 hours.  Serve over rice or egg noodles.

Broccoli Cheese Soup



1 1/2 C. butter
1 1/2 C. flour
4 C. chicken broth
4 C. milk
1 cup grated cheese
1 bunch broccoli
1/4 large onion
1 tsp. salt
1/4 tsp. pepper

Cook chopped broccoli and chopped onion - boil on stove until barely tender.  I like mine still a bit crisp and pretty green, not yellowed.  Drain the broccoli and set aside.  In a large pot, melt butter.  Add the flour and stir together. Quickly stir in chicken broth so the butter and flour don't get too pasty.  Then add the milk and let thicken.  Stir in cheese and let it melt.  Add salt and pepper.  Then add the cooked broccoli and onion.  Stir well  and serve.

Creamy Italian Chicken

1 bag frozen chicken tenders
8 oz. cream cheese
1 can cream chicken soup
1 can water
1 pkg. dry Italian dressing

Put chicken in crockpot.  In saucepan, heat the cream cheese, soup, water and Italian dressing until well mixed.  Pour over the chicken.  Cook in crockpot for about 5 hours.  Serve over rice.

Sweet & Sour Chicken

Sweet and Sour Chicken (Lion House Recipe)

3 lbs. chicken breasts
Sprinkle chicken with garlic salt
Dip chicken in egg and roll in flour
Brown each breast slightly in fry pan (use a bit of oil) You don't want to cover the chicken in oil, just enough to make it a golden color.

Mix: 3/4 C brown sugar
1/2 C rice vinegar (you can use regular vinegar - the rice vinegar is more tangy)
1/2 C chicken broth
3 1/2 T catsup
2 T soy sauce
1 T cornstarch

Heat and pour over the chicken in baking dish.
Bake uncovered at 325 for an hour. (Throw in crockpot on low for 3 hours if rather)


We like a green salad and baked potatoes with this chicken. OR a quick fried rice - cook your rice with a few tablespoons soy sauce. Saute onions, celery and ham to toss in with the rice when cooked. Can add frozen peas to it as well.
